GALETTE DES ROIS ET REINES
This January, Chef Marc Heu has brought back the beloved French traditional King’s Cake and reimagined it with his own special twist.
The Galette des Rois et Reines (King and Queen's Cake) integrates both Chef’s French and Hmong roots, combining roasted almond and roasted coconut in the frangipane to create a deeply nutty, tender center between two layers of flaky, buttery puff pastry.
The top displays a simple, elegant triangle pattern inspired by motifs found in Hmong tapestry, often used to represent mountains. In Chef’s cake, the two ranges represent the mountains of Laos, where his family came from, and the mountains of French Guiana, where he grew up.
Chef Marc’s cake is a homage to the idea that story and memory can be preserved by honoring nature, sharing food, and weaving the threads of lineage onto the paths of our future.
